Executive Chef Beau Raffensperger

A native of Boulder, Beau comes by his passion for cooking honestly as he grew up cooking for his family.  He was only 16 when he went to work for Proto’s Pizza. Beau was “hooked” and graduated from the Culinary School of the Rockies (now “Escoffier”) earning his culinary certification.  Chef Raffensperger came to Bacco when it first opened and has worked side by side with master chef marco monnanni to earn the title of Executive Chef.  “You have to dream to achieve and if you want the best Italian food in town, stop by Bacco Trattoria, I’ll be waiting”….

 

Executive Chef, Marco Monnanni

Marco Monnanni, Chef and Partner of Bacco Trattoria, taps into ages of ancestral Italian cooking.  Each time Chef Marco is in the kitchen, he brings a rich love of the cuisine that he has so skillfully learned through the years.  Born in Rome, Central Italy, Monnanni was a restaurant apprentice at age 14 in Rome, making fresh pasta and other specialities by hand; he later attended hotel school in Verona, Italy.  

Monnanni's creative talent drew him to restaurants in northern and southern Italy.  Chef Monnanni honed his skills in international kitchens in Switzerland, Germany and later in New York City and Las Vegas.  He also was chef and partner at Antica Roma, Pane e Vino and Acqua Pazza in Boulder, Colorado.  A man with a sweet smile, Monnanni speaks Italian, English and Spanish and has a passion for skiing.

 

General Manager, Jason Copeland

Jason Copeland, a military son, spent much of his youth on the road with various stops in the Southeast and Midwest. Starting in high school, he was lucky enough to begin his travels abroad and enjoy learning about different cultures. At the University of Tennessee a degree in geography furthered his interest in world affairs. Representing the university's hotel and restaurant program he was able to travel extensively throughout Asia and expand his desire to work with international cuisine. An after college backpacking trip covering most of Europe, and way too long according to his mother, is when Jason fell in love with Italy. With another return trip to Roma and Toscana last year, his passion for Italian food and wine has become his career. With ten years in the restaurant and hospitality business now, he has found some of the best of Italy in Boulder, Colorado.

Together Chef Monnanni and Owners Leslie Young, Laura Leovic and Melissa McKay have combined to create Bacco Trattoria, a unique restaurant offering a relaxed atmosphere and authentic Italian food and beverage. The decor is soft and traditional, but still carries a theme of Italian culture. Boulder is a city known for its trendy atmosphere and we compliment that with our unique Mozzarella Bar, one of the few open in the United States. We pride ourselves in bringing the first one to the city and reinforcing the culture that is Boulder, Colorado.
